Re disease, dis ease, there is just so much we can do to protect our bodies. Re my family, none of the men in my family, from grandfathers, to uncles, to dad, even made it to 60 years of age. Neither did my grandmothers, and by sixty, my mom was starting to show signs of Alzheimers. I guess that is why I think life is such a gift after sixty.

The gap between the way our sorry world is and the way it could be is immense! Hopefully more and more people will become aware of this and change things!

Therese, I’m having an alright day considering. Next Wednesday I see a specialist and get to hear my options none of which are especially attractive. Happy days!

..to the Beauties. Nature in its generosity. It gives us everything we need. We were given Heaven on earth. It is a symbiotic relationship. We care for nature and nature cares for the critters. It is a healthy, happy, well-fed world where there is room for everyone. In times of war and uncertainty, people over-procreate. In peaceful, educated times, people have fewer children and those children are educated and it is a better world.

I am so sick of war games for children!!!

What about learning to live in peace; Peace games? It takes intelligence and skill in the lost art of diplomacy, problem solving, logic, etc.

SOMEBODY.., wants our children to play lots of Wargames! It’s all there is on the shelves. You have to dig deep to find a boys game that doesn’t have to do with fighting. Even the Bakugan’s that my 7 year old and his class are into. They are modern day marbles, and their main objective is to Brawl. I can’t take much more. We have him play the most benign games we can find and put a two hour a day limit on all electronics. He has to deal with boredom, it is a developmental stage I would not want to deprive him of. Parents are so cruel. That’s why I told you I finally understood that song, ‘You have to be cruel to be kind’ : )

and here’s my recipe for rose petal sorbet:

first i have to point out that the first bloom is the best and to ascertain this, you have to pick a petal and taste it. it should be sweet and fragrant. and my roses have many petals. somewhat like a dog rose in appearance but with more petals. but i beleive any rose bush would be benficial it they taste pleasant.

1 cup of sugar (i use fructose and therefore not so much)
2 cups of water
1 whole head of rose petals
2 and half tablespoons of freshly squeezed lemon juice
2 tablespoons vodka

in a medium saucepan over medium heat, combine sugar and water till the sugar dissolves. add the rose petals and stir till mixture comes to a boil. reduce heat to low and simmer 5 minutes. remove from heat, cover and let stand for approx. 10 minutes.
place a fine strainer over a large bowl and pour syrup mixture through. add lemon juice and vodka to the strained mixture until thoroughly blended. (the vodka is the secret to a soft sorbet as it doesn’t freeze and keeps the sorbet somewhat soft and it doesn’t affect the taste) i also allow some of the boiled petals into the sorbet; makes for a rugged texture.

pour liquid into a freezer container, cover and place in freezer. when it is semi-solid, mash up with a fork and re-freeze again. when frozen, place in a food processor or blender and process until smooth. cover and re-freeze until serving time.

you can also use this same recipe for lavender flowers but only use one tablespoon of lavender as it’s a very strong flavour and has to be of culinary use. (i use the lavender flowers from my lavender plant which i’m not sure is culinary or not – but it hasn’t harmed me yet!!!!)

i also make sorbets of basil and lime and rosemary and orange and any other natural herbs and ingredients i think will go well together. but i always use fructose. i don’t use sugar. (for anything)

but for me the rose petal is the best………………
